Salmon Fra Diavolo with Veggie Topping

Image
On a chilly day like today, when the temperature never reaches above freezing, and the wind chill is in the negative digits, it is only natural to crave soups and stews. I had fish de-thawed in my fridge, so I initially thought I would make fish stew. Unfortunately, I didn't have all the ingredients, and I wasn't highly motivated to leave my house to go shopping. Luckily, Ellie Krieger saved the day with a simple, healthy and easy recipe, that I adapted below, using the fish I already had in my fridge! Great RD's must think alike! Ingredients 2 6 oz fish filets of your choice (Salmon, Tilapia, Cod, etc) Marinate overnight in a ziploc bag with : 2 Tbsp Wildtree Roasted Garlic Grapeseed Oil 1 Tbsp Wildtree Hot & Spicy Fra Diavolo Blend ¼ tsp salt OR 1 teaspoon dried crushed red pepper flakes 3 tablespoons olive oil 3 garlic cloves, crushed 1/4 teaspoon dried oregano leaves ¼ tsp salt 2 teaspoons garlic grapeseed oil, divided 1 small onion, di...

A Little Wine with Dinner

Image
Didn't I just say I would cut back on the alcohol in my last post? Well, I guess I'll keep trying. These delicious clams and mussels were just too perfect with a few glasses of white wine.  Maybe wine doesn't count... Anyways, I really lucked out with these little sea creatures because out of the 48 total clams and mussels I bought, only 1 was bad and didn't open up. It was probably because I bought them and cooked them on the same day and the lovely seafood lady at Whole Foods sent me with two heaping bags of ice to keep them cool. Although the mussel experts say you can store mussels in the fridge for several days, covered with a damp cloth. Giada, from the Food Network, is one of my favorite chefs. Every recipe I have made from her has been outstanding. This one was great because the crushed red peppers spice up the entire broth and give all of the seafood that little bit of kick. The recipe is supposed to serve 6, but the two of us ate all of the mussels...

The Irish know their Cheddar, and their Butter

Image
It's a tradition in my family to celebrate holidays at our convenience . Jewish holidays? Ehh, Saturday works better with my schedule. Christmas? I can wait til the weekend to see that side of the family. Valentine's Day? As long as it's in the same week...   I feel the same way about St. Patrick's Day . So although it was on Sunday this year, we made Irish food Friday night and ate green bagels Saturday before going on a mini pub crawl :)  Looking at traditional Irish recipes got me pretty discouraged, since I wasn't going to take 4 hours to make corn beef and cabbage, Irish stew, or shepherd's pie . But some how this equally long-winded recipe did not have the same effect, probably because of the beer :) But seriously, it did take four hours to make.  In fact, we had to break out the extra Irish cheddar and crackers to balance out the wine we were drinking. I kept telling myself that it was only about 45 minutes per serving - and t...

Easy, Healthy, Quick Meals Part VI

Image
There is a lot to be said for a recipe that cooks up quick and requires minimal prep time. Even more so if it is also healthy, cheap, and uses nonperishable ingredients. So even though this is not my favorite Giada recipe, it is definitely worth keeping the ingredients around in case I ever need to cook up  a good amount of food in a short amount of time. I promise you, it will grow on you as you eat, especially if you are generous with red pepper flakes and the parmesan ;) Ingredients: 1 pound farfalle pasta - I had gemelli so that's what I used 2 heads broccoli, trimmed to florets (about 4 cups) - I used frozen 1/4 cup extra-virgin olive oil 3 garlic cloves, chopped 5 anchovy fillets, diced 1/4 teaspoon red pepper flakes 1/2 teaspoon salt 1/2 teaspoon freshly ground black pepper 1/2 cup grated Parmesan - I used Romano cheese Directions: Bring a large pot of salted water to a boil over high heat. Add the pasta and cook, stirring occasionally. Cook the bro...

Recipe Re-do: Spinach Artichoke Dip

Image
Look Familiar? I last posted about this recipe in March 2010. This Spinach Artichoke Dip recipe from Juan Carlos Cruz has served me well over the past few years, so it is too bad that they took down the recipe from the Food Network website. Luckily, one of my fellow bloggers shared her version of the recipe, and I tend to agree with most of her revisions. Thanks, "Tiny Kitchen Cooking" .  Spinach Artichoke Dip Recipe courtesy Juan-Carlos Cruz & the Food Network Ingredients: 1 box frozen chopped spinach, thawed 1 cup light sour cream 1/2 cup grated Parmesan 1 cup shredded part-skim mozzarella 8 ounces reduced fat cream cheese, softened 4 cloves garlic, crushed 1/2 teaspoon freshly ground black pepper, plus more as needed 1 teaspoon hot pepper sauce, plus more as needed 1 (14-ounce) can artichoke hearts, drained Carrot sticks, celery sticks or baked tortilla strips, for serving Directions: Preheat oven to 350 degrees F. Giada's Roman Chicken

Image
I'm a fan of just about every thing Giada makes, and I had my eye on this recipe for quite some time. A perfect healthy date night meal. Ingredients 4 skinless chicken breast halves, with ribs 2 skinless chicken thighs, with bones 1/2 teaspoon salt, plus 1 teaspoon 1/2 teaspoon freshly ground black pepper, plus 1 teaspoon 1/4 cup olive oil 1 red bell pepper, sliced 1 yellow bell pepper, sliced 3 ounces prosciutto, chopped 2 cloves garlic, chopped 1 (15-ounce) can diced tomatoes 1/2 cup white wine 1 tablespoon fresh thyme leaves 1 teaspoon fresh oregano leaves 1/2 cup chicken stock 2 tablespoons capers 1/4 cup chopped fresh flat-leaf parsley leaves Directions Season the chicken with 1/2 teaspoon salt and 1/2 teaspoon pepper. In a heavy, large skillet, heat the olive oil over medium heat. When the oil is hot, cook the chicken until browned on both sides. Remove from the pan and set aside. Keeping the same pan over medium heat, add the peppers and pros...

Healthy Mac, Maryland Style

Image
After a late night watching Food Network, I was inspired to try one of Ellie Krieger's Meal Makeovers! Check out this Video, and Get Inspired! First on the list was her "Macaroni and 4 Cheeses" - made with more than a pound of pureed butternut squash and low-fat milk. I stepped it up a notch by using whole wheat pasta, and using half the amount of bread crumb topping.  After reading the reviews, I was concerned that the squash would overpower it, but after trying it, I thought there was a really great balance between subtle squash flavor and cheesy goodness.  I served it with a sprinkle of Old Bay Seasoning for an extra kick, instead of the Cayenne Pepper that Ellie recommends. On the side, I had some fresh asparagus from the University Farmer's Market yesterday. It was absolutely delicious after I brushed it with olive oil, sprinkled on some parmesan cheese and roasted it under the broiler until soft. Ingredients Cooking spray 1 pound whole wheat elbow m...

Cinco de Mayo with Ellie Krieger, RD :)

Image
So, I know I've talked about Ellie Krieger in the past, but I'm not sure I've ever actually made one of her recipes. She is the only Chef on the Food Network that is also a Registered Dietitian, and you know I am in support of that! This past Cinco de Mayo, I finally decided to make one of her recipes - a five-layer Mexican dip. It disappeared in the first twenty minutes of the party, and it was pretty easy to make. The only time-consuming part of the recipe was chopping up the veggies, but it was worth it! And the best part about Ellie's recipes? She does the nutritional analysis for me :) Ingredients 2 teaspoons olive oil 1 medium onion, diced 2 cloves garlic, minced 1 (15.5-ounce) can black beans, preferably low-sodium, drained and rinsed 1 tablespoon minced chipotle pepper in adobo 4 tablespoons lime juice 1/4 teaspoon ground cumin 1 tablespoon water 1/2 teaspoon salt 2 cups corn kernels (10-ounce box frozen corn) 1/4 cup chopped cilantro leaves...

"Health" Food

Image
I have been working at a hospital and helping them run a Wellness Program all summer. Each week we send out recipe ideas and workout tips in a newsletter to the participants. Each week I promise I will try the recipe before hand to make sure I am not going to discourage people from eating vegetables or trying a new food. And each week, I fail to do it. Well, this week the recipe is not a vegetable or a new way to bake chicken, but muffins. Muffins I can do. I have no problem finding the motivation to bake up a batch of Fig Muffins. Especially because there is a valuable lesson in recipe substitutions to be learned. And the added bonus? The recipe was written by a Registered Dietitian! Check out Ellie Krieger on the Food Network if you get a chance - she is the real deal. Ingredients Cooking spray 1 cup chopped dried figs, plus 3 whole dried figs 1 1/2 cups bran cereal (recommended: All-Bran) 1 cup lowfat milk 1 1/2 cups whole-wheat flour 1 tablespoon baking powder 1/2...

In Search of Decadent French Toast, Part II

Image
I was looking for decadence, and I got it... but then Lemon Curd is about the most decadent spreadable I have ever lathered on a piece of bread. It is pretty much lemon meringue pie filling (and it has all the butter, eggs and sugar to prove it).                                                                                                                                          " In late 19th and early 20th century England, home-made  lemon curd  was traditionally served with bread or scones at  afternoon tea  as an alternative to  jam , and as a filling for cakes, small  pastries  and  tarts ."...

Got Bananas?

Image
If given the choice to eat 4 overripe bananas or make them into a cake - I would make them into a cake every time. This recipe was so much fun to try with my boyfriend and I was happy to have the extra hands when we were preparing the caramel. As a general rule, I like to cut the fat in half in my baking recipes - it almost never has an effect on the flavor. The butter may be needed for the caramel sauce, but the vegetable oil can definitely be cut in half from 1/2 cup to 1/4 cup. Caramelized Banana Loaf Cake  Rachel Ray Magazine, December 2009 Ingredients: 3 to 4 large bananas 3/4 cup sugar 2 Tbsp unsalted butter, in 1 piece 1 large egg plus 1 large egg white 1 teaspoon pure vanilla extract 1 cup flour 1 teaspoon baking powder 1 teaspoon cinnamon 1/4 teaspoon salt 1/2 cup vegetable oil Directions: 1. Position a rack in the center of the oven and preheat to 325 degrees. Grease a 5-by-9 loaf pan. Trim both ends off each of 3 bananas to...

In Search of Decadent French Toast

Image
My obsession with french toast began with my mother's basic white bread and egg recipe and was further provoked by repeated visits to La Madeleine for their version covered in bananas, strawberries, honey, syrup and who knows what other secret, delicious ingredients. So it is no surprise that I clipped out a recipe called " Perfect French Toast " from the Food Network Magazine and vowed to attempt all three variations -  lemon blueberry, chocolate and strawberry shortcake. I'm working in my best friend's kitchen today and I know she would appreciate the leftover english muffins, so I am going to start with the Strawberry Shortcake .... Ingredients: Basic Recipe: 4 eggs 1 1/2 cups milk 1/2 teaspoon nutmeg 1 teaspoon vanilla extract 1 teaspoon sugar 1 pinch salt 1/2 Tbsp butter Extras for Strawberry Shortcake Variation: 1 teaspoon grated lemon zest 3 Tbsp sugar 3 cups halved strawberries 4 English muffins, halved Honey (for drizzling) Vanilla Yogurt (for toppin...

Drunken Risotto - A delicious first meal for the hubby's new house :)

Image
After reading so many other blogs and recipes online I can't help but adopt the use of the word "hubby". I often read reviews that read like, "made this Sunday night, hubby didn't like it, probably won't make it again." Well, if I was writing a review of this Rachel Ray recipe (will try to post it), I would have to write, "made this last friday, hubby had seconds and thirds, will definitely repeat." Ingredients 3 cups dry red wine 2 cups chicken stock 2 tablespoons extra-virgin olive oil (EVOO) 3/4 pound bulk Italian sweet or hot sausage 1 small onion, finely chopped 2 large cloves garlic, finely chopped 1 1/2 cups arborio rice Salt and pepper 1/3 pound spinach leaves, stemmed and chopped (about 2 cups) 1/8 teaspoon freshly grated nutmeg 2 tablespoons butter 1/2 cup grated pecorino-romano cheese Directions In a large saucepan, combine the wine and chicken stock; keep warm over a low flame. In a large, heavy pot, heat ...

More Snow, More Food!

Image
I'm not sure that I have mentioned that I started cutting out recipes from magazines and putting them in an empty, old photo album . Well, it has been interesting to say the least. I have been disappointed with how some of them have turned out, (See Squash Casserole ) while others were pretty tasty (See Holiday Fruit Pies ). But to be honest, the recipes that are consistently good are the ones that are online . When I go to a site like allrecipes.com and there are rave reviews about the Molasses Cookies, I know they are gonna be amazing. And even better, a lot of the comments are very constructive - reviewers discuss substitutions they made and try to clarify some of the directions. It's kind of like Peer Review in scientific journals - as people test this "chemical reaction" they are checking the validity of the experiment and making it better!  Yesterday, I made Macaroni and Cheese from scratch. I had a recipe from Rachel Ray in my recipe book/photo album t...

While reading the Food Network magazine for October, scavenging for cute halloween ideas for our October 30th party, I stumbled upon this recipe for Cheesy Stuffed Shells . Well, after being sick for so long, I was craving comfort food, and thought of those jumbo shells that my mom used to fill with tomato and ricotta cheese, so I bought some from the grocery store last weekend. I had to get creative with a few ingredients and I left a few out, but it I think it turned out pretty okay. CHEESY STUFFED SHELLS Active: 40 min Total: 1 hour, 25 min Serves 4 to 6 FOR THE SAUCE Kosher salt 2 Tablespoons extra-virgin olive oil 1/2 cup grated carrot 1/2 cup grated zucchini (I didn't have any :( so I left it out) 1 small onion, finely chopped 1/2 cup chopped celery 3 cloves garlic, minced 1 teaspoon dried basil 1 teaspoon dried oregano 2 Tablespoons tomato paste 1 28-ounce can crushed tomatoes Freshly ground pepper FOR THE SHELLS 1 12-ounce box jumbo pasta shells 8 ounces silken tofu (skippe...
